7 Quick and Healthy West African Recipes for the Busy Home Chef

Healthy air fryer West African dishes made with less oil

A bunch of 7 authentic West African recipes to explore the maximum potential of your air fryer and reduce your calories

Chale, let’s be honest. After checking the air fryer price and finding one that suits your budget, you sure bought the latest air fryer from your local electronics store. You beamed with pride as you brought it home, thinking that it would change your kitchen game forever. It worked like magic in the beginning as you threw in your frozen favourites and watched the machine crisp your food restaurant-style, without drowning it in a gallon of oil. But now, the new machine is losing its charm, and you are stuck in a boring loop of cooking the same two items over and over again. Now, you wonder if you bought into the hype.

Oga, you did not spend hard-earned money just to reheat plantains and frozen fries! Your kitchen companion is capable of much more! You can whip up healthy air fryer recipes for the family in minutes, even after a long day in traffic, or you can look for easy air fryer meals that can be prepared in a jiffy. With low-oil air fryer cooking, you can reduce your cooking oil budget while still enjoying the flavourful West and East African cuisine.

This guide is designed to unlock the true potential of your appliance. Let’s dive into some practical air fryer cooking tips and turn you into a certified kitchen wizard.

Things you never knew you could make in your Air Fryer

An Air Fryer works by simply circulating hot air around your food. You get the crispy texture you want and the taste you desire. It is deep frying minus the oil.

Here’s what all you can make in the Air Fryer:

  • For an Absolute Beginner, finger food and snacks are the best food type to start using the machine. Snacks like meat pies, French fries and chilli bites come out incredibly crispy and hot, far superior to anything you could make in a microwave or even a standard oven. Your chicken wings would also be churned out golden and crunchy while the meat remains tender and juicy.
  • As you advance from the beginner level, you can try out some of our local favourites, like the sweet Dodo, the ginger-infused Kelewele cubes, the crispy Puna Yam fries, grilled Tilapia, Croaker, Catfish, the street-style Suya and the Yaji-spiced meats. The air fryer is also fantastic for making Akara and Puff Puff, giving you delicious, less greasy results that won’t leave you feeling weighed down.

Mistakes you should never make with your Air Fryer: What not to cook in it?

While the potential of your kitchen assistant is huge, there are some things you cannot cook in the machine.

  • Foods that make a mess, like liquid batters, dry seasoning and shredded cheese, should not be placed in the Air Fryer.
  • Foods that will not cook properly, like large whole chickens, raw grains, loose leafy greens and popcorn. These may not cook properly even in an extra-large capacity air fryer.

Nevertheless, there are plenty of options you can make in your Bruhm air fryer, and we have listed some to begin with. But before we dive in, here’s a quick guide to the air fryer controls:

The Timer, which ranges from 1 to 60 minutes. Most units have this timer as a dial or a digital panel with arrow buttons.

Temperature Control, ranging from 82°C to 204°C (180°F to 400°F). You can adjust the temperature to low for delicate food items and high for crispy chicken or Mandazi.

Preheat function: Let the internal compartment of the air fryer reach the ideal operating temperature before food is placed inside. Always remember that air fryers are about 20% to 30% faster at cooking than traditional ovens.

7 Authentic African Recipes you didn’t know you could make in an Air Fryer

Nigerian Suya-Spiced Chicken

What you need: 500g boneless chicken breast or thighs cut into strips, 1 tbsp groundnut oil, 2 tbsp suya spice (yaji), ½ tsp salt, ½ tsp paprika, ¼ tsp cayenne pepper, thinly sliced onions, and tomatoes to serve

How to make: Pat chicken dry, toss with oil, Suya spice, salt, paprika, and cayenne; marinate for 30 minutes. Preheat your Bruhm air fryer. Arrange chicken in a single layer in the detachable non-stick drawer. Watch the progress through the transparent window. Cook for 8 to 10 minutes; use the shake reminder function, flip, and cook for another 7 to 10 minutes until 74°C (165°F). Enjoy safe cooking with overheat protection, automatic shut-off, and a touch control panel.

Air-Fryer Akara (Nigerian Bean Fritters)

What you need: 250g peeled black-eyed beans, ½ small onion, 1 to 2 Scotch bonnet peppers, 1 tbsp ground crayfish, ½ tsp salt, 2 to 4 tbsp water, 1 tbsp vegetable oil.

How to make: Soak and blend the beans, onion, peppers, crayfish, salt, and water into a thick batter, then beat for 2 to 3 minutes to incorporate air. Lightly grease silicone muffin cups or small oven-safe moulds and fill them two-thirds full, brushing the tops with oil.

Preheat your air fryer, place the moulds securely into the detachable non-stick drawer, and select your temperature on the touch control panel. Monitor your akara through the window while the rapid hot air circulation technology works its magic. Utilise the 1-30 minute timer with automatic shut-off, listening for the shake reminder function to check on progress. Rest easy knowing the overheat protection is keeping things safe. Air fry for 10 to 15 minutes until firm and browned, then serve hot with pap or bread!

Air-Fryer Dodo (Nigerian Fried Plantain)

What you need: 2 ripe but firm plantains, 1 to 2 tsp palm oil or vegetable oil, ¼ tsp salt, pinch of cayenne pepper.

How to make: Peel and cut plantains diagonally into 1 to 1.5 cm slices, then toss with oil, salt, and cayenne.

Arrange the slices in a single layer inside the non-stick drawer and detachable frying rack. Set your target temperature using the precise adjustable settings (up to 220°C) and lock in your duration using the 1-30 minute timer with automatic shut-off. Let the air fryer go to work while you monitor the browning through the window. Air fry for 4 to 6 minutes, wait for the built-in shake reminder function to prompt you, turn the slices over, and cook for another 4-6 minutes until perfectly caramelised and crispy at the edges.

Crispy Nigerian Yam Cubes

What you need: 1 medium yam, 1 tbsp groundnut or vegetable oil, ½ tsp salt, ¼ tsp black pepper, ½ tsp paprika, ¼ tsp garlic powder.

How to make: Peel the yam and cut into 2 to 3 cm cubes, then soak in cold water for 15–20 minutes to remove surface starch. Drain and dry very thoroughly before tossing with oil and spices.

Preheat your air fryer using the touch control panel and adjust the heat to a 60°C – 220°C range. Arrange the cubes in a single layer inside the drawer and frying rack. Set the timer to automatically shut off after 15 to 20 minutes. Shake the basket halfway through.

Ghanaian Kelewele (Spiced Plantain Cubes)

What you need: 3 ripe plantains, 2 to 3 tbsp vegetable or avocado oil, 1 tbsp grated fresh ginger, 1 tsp ground chilli pepper, 1 tsp paprika, ¼ tsp ground cloves, ¼ tsp ground allspice, a pinch of nutmeg, ½ tsp salt.
How to make: Peel and cut the plantains into small cubes. Mix the ginger, spices, and oil. Toss the plantains into the mixture and mix properly until the plantains are properly coated. Preheat the air fryer, arrange in one layer, and air fry for 6 to 9 minutes; shake, and cook for another 6 to 9 minutes until browned. Serve hot with roasted peanuts.

Ghanaian Meat Pie

What you need: 300g plain flour, 150g cold butter, baking powder, water; minced beef filling cooked with onion, carrots, bell peppers, ginger, garlic, curry, thyme, and stock.
How to make: Make the pastry dough and let it chill. Cook and thicken the minced beef filling and let it cool completely. Roll out the dough, cut circles, add filling, fold, crimp edges, and brush with beaten egg. Air fry in batches for 18 to 25 minutes until golden brown.

Senegalese Air-Fryer Chicken Yassa

What you need: 4 bone-in chicken thighs, 4 large sliced onions, juice of 2 lemons, 2 tbsp Dijon mustard, garlic, oil, Scotch bonnet peppers, bay leaves, olives.
How to make: Marinate chicken in lemon juice, mustard, garlic, and spices for at least 6 hours. Air-fry the chicken at 190°C for about 20 minutes until fully cooked and golden. Meanwhile, caramelise the onions in a pan with the leftover marinade and simmer with olives and peppers before combining with the chicken.

Your air fryer is not just a passing kitchen fad; it is a powerful tool designed to make your life easier, healthier, and faster. By stepping away from the boring routine of frozen chips and exploring rich local dishes like Suya chicken, Kelewele, and Akara, you will finally get your money’s worth out of your investment. Happy cooking, chale!

FAQs –

What traditional African recipes can I cook in my air fryer?

The top local recipes you can try in it are dodo, kelewele, yam fries and suya-spiced meats. The idea is to replicate deep-fried, oily favourites by using just a little bit of oil.

What should I never cook in an air fryer?

Avoid cooking items like wet batters, raw grains, leafy greens, rice and popcorn in the air fryer. This may create a mess or cause safety hazards.

Why is my food not coming out crispy?

Your air fryer basket is perhaps overcrowded. Air needs to circulate in the basket to create the crunchy, crispy texture. Cook in small batches and ensure the food is completely dry before you layer it with a coating of oil.

Why is white smoke coming out of my air fryer?

This is typically caused by cooking overly fatty foods where grease drips down to the bottom and burns. To fix this, trim excess fat from your meat before cooking, or add a tablespoon of water to the bottom drawer beneath the basket to catch and cool the drippings.

Can I use tin foil or parchment paper in an air fryer?

Yes, but you must follow three strict safety rules:

Don’t block the edges: Leave plenty of space for hot air to circulate.
Don’t preheat with it empty: The fan will blow loose foil into the heating element, creating a fire hazard.
Always weigh it down: Ensure heavy food holds the liner down securely so it cannot lift off the bottom.
